I think if you add the word “butter” to anything it makes it sound irresistible! Even though this is made with pumpkin butter it doesn’t actually have any butter in it I’m sorry to say, but you definitely won’t miss it.  This is a breakfast recipe you HAVE to make this fall.  It’s easy, healthy, and good for on-the-go people.  I love using mason jars as my to-go containers for breakfast and this is no exception.  By simply adding a little pumpkin butter to your greek yogurt it adds warmth, a slight sweetness, and that fall PUMPKIN flavor that everyone can’t seem to get enough of.  Then to make it even better I like to add my Homemade Pumpkin Pie Spiced Granola to it and it’s basically the best healthy fall breakfast ever.  It’s rich and creamy from the yogurt, crunchy from the granola, but not sugary-sweet.

Pumpkin Butter Parfaits

*makes 2 small parfaits or 1 large parfait*

1 cup greek yogurt; unsweetened

2 tablespoons pumpkin butter

about 1 to 1 1/2 cups granola; I like using my Homemade Pumpkin Pie Spiced Granola

How To:

*Mix together the greek yogurt and the pumpkin butter until well combined

*Layer a mason jar with a little yogurt

*Top the yogurt with some granola

*Keep doing this until you reach the top

*I like the top to be the granola layer in case I need to put a lid on it to take it to go it’s less messy

*You can add fruit if you want, but I like to taste the pumpkin so I leave it out for this one
