 I don’t think I will ever understand how people go without breakfast OR don’t even like breakfast.  What? Who are these people? I can’t get my day started unless I have breakfast… and coffee.  I mean we will be running late to the airport and I will literally make scrambled eggs before we leave.  I may have a problem.  So to all the people who don’t like breakfast you should try this, to the ones who say they don’t have time I don’t believe you, and to the ones who say that they love breakfast then we should be friends! Anyways……

Eggs and Avocado Breakfast Pizzas!! I like to use my recipe for seeded crusts (which I use for pizzas) to add a little something extra to breakfast.  This is really simple.  The crusts can be made ahead of time and then warmed up in the oven while you make your eggs.  I love poached eggs and my husband prefers scrambled so I thought I would show you how pretty this recipe can look both ways.  The textures in this little creation prevent this from being a boring breakfast.  I love the crunch and salty flavor of the crust, the avocados add a creaminess, and of course the eggs add that rich savory flavor.  I top it off with fresh herbs and I like to add hot sauce for an extra kick!

Eggs and Avocado Breakfast Pizzas

(For one pizza)

1 6-inch seeded crust; baked

1/2 avocado

1 egg

1-2 teaspoons fresh herbs (I like parsley)

hot sauce; as much as you like (optional)

salt and pepper to taste

*Bake 1 seeded crust (If it’s been pre-baked you can just warm it in the oven at 350 degrees)

*Once crust is baked allow it to cool while you prepare your eggs

*Prepare your eggs by scrambling them or poaching them

*Smash the avocado onto the crust using a fork

*Place the cooked eggs over the avocado

*Top with fresh herbs and hot sauce
