Cinco de Mayo may actually be one of my favorite holidays! It is basically just an excuse to eat Mexican food, which happens to be a favorite of mine. In the meantime, I am rounding up some of my favorite recipes and DIYs that are perfect for the celebration, starting with Strawberry Basil Margaritas. Strawberry and basil are one of my favorite combinations and you can put this over ice or blend it up!
Sweet pineapple is a great juxtaposition to savory Mexican food. I like to add a mint simple syrup to make it extra refreshing. No sour mix in these Pineapple and Mint Margaritas.
It isn’t Cinco de Mayo without guacamole! I changed up the traditional guac and added pops of sweetness with fresh corn and a salty, creamy bite with queso fresco with my Corn and Queso Fresco Guacamole.

I make this recipe for Weeknight Tacos usually once a week. It is an easy way to get some veggies in, it can be made ahead, and I just really like tacos. You can add meat to this recipe as well!
If you have never made your own taco seasoning, I highly recommend it! You can customize it to the flavors you like. Try this recipe out and adjust as needed.
This recipe for Grilled Corn with Parmesan and Herbs was my Italian take on the traditional Mexican street corn. It is a much lighter version than the very decadent Mexican recipe, but I love the nutty flavor from the Parmesan. You can replace it with Cotija cheese if you want!
