A New Take On Eggs Benedict

A New Take On Eggs Benedict made with a much healthier hollandaise sauce made from avocados. From Scratch With Maria Provenzano

When you think about Eggs Benedict generally it’s served at special occasions and fancy brunches.  The truth is that it can be made at home and made healthier. Eggs Benedict is one of my husband’s favorite breakfasts! It sounds like it would be difficult, but this version made with my Avocado Hollandaise actually simplifies it.  The bad thing since I have created a fun recipe for it is that now he wants to have it for breakfast all of the time!

For two servings

(This recipe is easy to double)

Here is what you need:

2 english muffins cut in half

4-6 slices of canadian bacon

 Parmesan cheese (around 1/2 cup)

4 eggs; fresh (Here’s how to poach them)

Avocado Hollandaise (recipe here)

salt and pepper to taste

How to make it:

*Heat the canadian bacon over medium low heat until cooked through

*Boil the water for the eggs

*Make the Avocado Hollandaise

*Begin poaching the eggs; place in one at a time and only two in the pot at a time (cooking time will depend on how well done you like the yolks)

*Lightly butter or drizzle olive oil on the english muffins and place them under a broiler until toasted (you could use your toaster instead if preferred)

*Once they are toasted shred some parmesan over the hot english muffin

*Place the canadian bacon over the cheese; 1 or 2 slice depending on their size

*Top the bacon with the poached eggs

*Pour the avocado hollandaise over the eggs and sprinkle with more cheese

*Sprinkle over some salt and pepper to taste

Enjoy… and thank me later!

  1. That looks like the perfect poahecd egg, nicely done! BTW, if you can make yogurt at home yourself, go for it and save your money. The machine is the only way I would do it and I’m already planning on making more tomorrow so it works for me.
